It seems that everyone has some dietary restriction at the farmers market. For example, I’ve been vegetarian for 5 years now and cried the last time I accidentally received and ate sausage instead of soysage. Candace has been selling at the market since the beginning of the 2014 season so it's been a privilege to taste her progress and the fine tuning of her skills. When she first started at the market she had basic adaptations of cheddars and mozzarellas that used ground cashews for substance and a combination of organic spices for flavoring. She’s since experimented and often found perfection.
And Candace hasn’t been eating vegan forever. She told me that in her mid-twenties she couldn’t appreciate vegetables. She didn't start eating vegan until 5 years ago when her son come home from school with his mind made up that he was never ever eating animals again. After that the decision was made which lead to her researching and experimenting with vegan cooking that satisfied her cravings.
Her product has been well received at the market. She notes that people often approach her product with hesitation but as soon as they try it they’re smitten. My good friend Daylan has been eating vegan for 4 years and they love having more diverse options at the markets. And Rabbit Food offers such a wide selection that I wanted to highlight 3 of my favorite styles Candace has made.
#3 “If You Say So Vegan Queso”
- This one comes closest to cheese. It’s got a touch of spice which I love (I’m a Scorpio) and makes the perfect substitution for cheese. Substituting a dollup of this in Mac & cheese, burritos, or scrambles is better than traditional cheeses.
#2 “Spinach Artichoke Dip”
- I love artichokes more than most of my exes but this stuff is amazing. Her dip is the perfect ratio of spinach and artichoke hearts and is all united in a creamy cashew-based magical substance. I threw some in with Macaroni once and I still haven't been able to top it.
#1 “Buffalo Bleu“
- This is by far one of my favorite foods ever. It’s based with sunflower seeds so if you can’t do cashews, this one’s got you covered. It’s the perfect dip for chips or market veggies (cucumbers, radishes, carrots, etc). I you like spicy things and haven’t tried this, get to the next market.
So if you haven’t tried Rabbit Food yet, check it out. You certainly don’t have to be vegan or gluten intolerant to appreciate her stuff.
